Seafood Spinach Pasta delight

I love it,very delicious---I took courage and ate the octopus--which looked like calamari,it tasted like seafood. This is an incredibly healthy meal.

It was very inexpensive and easy to make--I made my own Alfredo mix sauce with spinach and great Northern beans with olive oil.


The pasta I used was spinach fettuccine--boil it in a medium large pan, on medium heat with sea salt for about 3-5 minutes.


For the seafood it was a mixed combo that was already in a package---It included shrimp,squid,octopus ans surimi;I removed it from the package,drain all the seafood frozen water---deveined the shrimp--make sure it was all clean and "rinsed" it in medium hot sea salt water for about 1 minute.



Then I let it sit to make my Alfredo mixture in a blender.
I added 1/2 cup of water,spinach,the Northern beans,the Alfredo mix package and olive oil--then I proceeded to blend.


        I only blended the beans,but I added the mushrooms with the seafood later.

I used a detachable hand blender it's really good.





Then I used a non-stick large pan,added 1/2 stick of unsalted butter,let it melt,then added the seafood mix,stirred and added the mushroom and 1/2 cup of water and let simmer and saturate for 4 minutes on medium heat. Then I proceeded to add my Alfredo spinach mix and I added grated Parmesan cheese;I let it boil and simmer of 8 minutes. you can add salt,pepper,garlic powder or any seasoning of your choice. After the sauce was ready I added it in a large boil---and prepared my plate and topped it with crumbled blue cheese and sprinkled grated Parmesan cheese all over it.

Moroccan Dish:Chicken Tagine with lemon,green olives and Mango--And also tomato salad and yellow rice

I truly enjoyed cooking this recipe and also learning about the Moroccan Culture. YUMMY!
Next week,I will be make sushi.





I wanted to make this meal really simple,also very healthy
The spices I used included salt,pepper,ginger,paprika,dried and fresh parsley,mixed peppercorn,safron and dried Garlic.


I used all natural boneless skinless chicken with no hormones or preservatives,I used olive oil,cream of chicken,chicken broth,fresh tomatoes,fresh Garlic,fresh parsley,onions,green peppers,dried mango's,fresh cut lemons and green olives stuffed with red peppers. I must say,I truly enjoyed cooking this meal.











I cut the All natural Boneless chicken into small medium size pieces then I seasoned it with seal salt,pepper and olive oil---you can always get creative and add extra.



After I took care of the chicken,I heated my cooking pan and added olive oil--chopped onions,green peppers,parsley,tomato and garlic.


Your suppose to use a Tagine to cook this recipe,but since most people don't have a tagine at their disposal,I used a regular pan,this is what a Tagine looks like.





I used a non-stick large pan and added the olive oil,the garlic,parsley,onions,green peppers,tomatoes,sea salt,pepper,one teaspoon of turmeric,also ginger,then cream of chicken and chicken broth---you don't have to use chicken Broth---you can use water,I prefer chicken Broth.




 After I added the chicken Broth and cream of chicken--I added the all natural small medium cut chicken and let it cook for about 6 minutes.




Then I added the fresh cut lemons,dried mango's,ginger,mixed peppercorn and a pinch of turmeric and let it cook on medium heat for another 6 minutes or until fully cooked.




After it looks well cook,add the green olives always and let it simmer on low heat for about 5 minutes.

Voila!





The tomatoes Salad is really easy to make,fresh cut tomatoes,Fresh finely cut parsley,white vinegar,olive oil,sea salt and pepper,ginger,fresh black olives and goat cheese.



And the saffron yellow rice--2 cups of water---add olive oil---salt and pepper---saffron and rice---cooks for about 20 minutes.
